Shrimp Salad Dip with Baked Tortilla Chips

This satisfying shrimp salad dip is sure to please. In addition to the baked tortilla chips, you can also serve with extra Belgian endive spears.

Shrimp Salad Dip with Baked Tortilla Chips

Dip
  1. 2 cups cooked shrimp, chopped
  2. 4 teaspoons paprika
  3. 2 green onion, chopped
  4. 2 tablespoon mayonnaise
  5. 1 lemon, juiced
  6. 4 endive heads, chopped
  7. salt and pepper to taste
Chips
  1. 4 corn tortillas, each cut into fourths
  2. olive oil
  3. salt to taste
Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Mix all ingredients for dip together in a bowl. Chill for at least 30 minutes.
  3. Place tortilla pieces on baking sheet. Drizzle olive oil over tortilla pieces and lightly sprinkle with salt.
  4. Place in oven and bake 10-15 minutes, until golden brown.
  5. Serve chips with shrimp salad dip.
