Purple Cabbage & Arugula Salad with Balsamic-Mustard Dressing

Full of antioxidants, this salad is super simple to throw together on any week night. The purple cabbage adds a brilliant pop of color against the green of the arugula. So put on some Prince music and get in the kitchen!

Ingredients
  1. 2 cups shredded purple cabbage
  2. 2 cups arugula
  3. 1/4 of a red onion, thinly sliced
  4. 1/4 cup blue cheese, crumbled
  5. 1/4 cup walnuts, chopped
  6. 1/4 cup balsamic vinegar
  7. 1/2 cup olive oil
  8. 1 tablespoon honey
  9. 1 tablespoon dijon mustard
  10. salt & pepper to taste
Instructions
  1. Combine all purple cabbage through walnuts in large bowl. Set aside.
  2. Whisk together all remaining ingredients in small bowl. Drizzle over salad and mix well.
Notes
  1. You can store any leftover dressing the fridge.
