Purple Cabbage & Arugula Salad with Balsamic-Mustard Dressing

Ingredients
- 2 cups shredded purple cabbage
- 2 cups arugula
- 1/4 of a red onion, thinly sliced
- 1/4 cup blue cheese, crumbled
- 1/4 cup walnuts, chopped
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- salt & pepper to taste
Instructions
- Combine all purple cabbage through walnuts in large bowl. Set aside.
- Whisk together all remaining ingredients in small bowl. Drizzle over salad and mix well.
Notes
- You can store any leftover dressing the fridge.
