Spring Veggie Slaw

Spring veggie abundance! Try this slaw along side grilled pork chops. Using a mandolin is the trick to getting the veggies sliced super thin.

Ingredients
  1. 1 kohlrabi bulb
  2. 1 fennel bulb
  3. 4 radishes
  4. 1 garlic scape, sliced thin
  5. 1 tablespoon dill
  6. 1 tablespoon blue cheese, crumbled
  7. 1/4 cup Greek yogurt
  8. 1 tablespoon buttermilk
  9. 1 tablespoon olive oil
  10. 1 tablespoon apple cider vinegar
  11. Slice kohlrabi, fennel and radishes very thin, then julienne.
  12. Add kohlrabi, fennel, radishes and garlic scapes to a large bowl.
  13. In a small bowl whisk together Greek yogurt, buttermilk, olive oil, dill and apple cider vinegar.
  14. Stir in blue cheese crumbles.
  15. Season with salt and pepper.
  16. Pour dressing over vegetable mixture and stir to combine.
  17. Let sit for at least half hour to let flavors blend.
