Pork Roll Breakfast Sandwich

Pork roll sandwiches are delicious but can be pretty greasy and full of calories. This version uses whole grain bread and veggies to add some fiber along with vitamins and minerals. Don’t worry, there’s a little bit of cheese in the middle so you get a bit of gooey-ness!

Ingredients
  1. 2 slices 100% whole grain bread, toasted
  2. 2 slices of Taylor pork roll
  3. 1 egg
  4. 1 tablespoon grated cheddar cheese
  5. 1 tablespoon horseradish
  6. 2 large leaves of romaine lettuce
  7. few slices thinly sliced red onion
  8. 6 thin slices of zucchini
Instructions
  1. Lightly pan fry the pork roll. It will curl a bit - this is normal.
  2. Once the pork is cooked, set aside and add the egg to the pan.
  3. When the egg is almost cooked to your preferred doneness, sprinkle with the cheese and cover for another minute. Covering it allows the cheese to melt.
  4. Assemble your sandwich: spread the bread with horseradish, top each slice with onion slices and lettuce. Add one slice of pork to each bread slice and then top with zucchini slices.
  5. Add the egg to one slice, then top with the other slice of bread to make the sandwich.
  6. Cut and serve!
