Ingredients
  1. 2 - 4oz pieces of cod
Glaze
  1. 2 teaspoons red miso
  2. 1 tablespoon reduced-sodium soy sauce
  3. 1 tablespoon rice vinegar
  4. 1 tablespoon brown sugar
  5. 2 teaspoons sambal oelek
  6. 1 teaspoon minced garlic
  7. 1 teaspoon minced ginger
  8. 1 teaspoon toasted sesame oil
Instructions
  1. Preheat oven to 400 degrees.
  2. Mix all ingredients for glaze together in a bowl. Spread glaze over the top of cod pieces. Bake cod for 4 minutes then broil for 6 minutes.
Notes
  1. I like to serve this with brown basmati rice and sautéed baby bok choy.
  2. This glaze makes enough for about 4 pieces of cod. Any leftover store in an airtight container in the fridge.
