Mediterranean Chickpea Spread

Looking to try something new for lunch? Upgrade your sandwich with this Mediterranean Chickpea Spread. It’s super easy, full of fiber and delicious! This can easily be spread into a wrap, stuffed into a pita or sandwiched between two slices of whole grain bread (shown here)! 

Mediterranean Chickpea Spread

Ingredients
  1. 1 can of chickpeas, drained and rinsed
  2. 2 celery stalks, chopped fine
  3. 2 carrots, chopped fine
  4. 2 garlic cloves, minced
  5. 1 tablespoon chopped parsley
  6. 2 tablespoons Greek yogurt
  7. 1 tablespoon tahini
  8. 1 tablespoon red wine vinegar
  9. 1/2 tablespoon each: cumin, zaatar, sumac
  10. 1 teasoon cayenne
  11. 1 tablespoon olive oil
  12. salt and pepper to taste.
Instructions
  1. Add all ingredients to large bowl. Stir to combine. With a fork, roughly smash down the chickpeas so it has a chunky but spreadable texture. If the mixture is too thick, add a little more olive oil or even a little bit of hot water.
