Ingredients
  1. 1 mango, diced
  2. 2 tablespoons red onion, diced
  3. 2 garlic cloves, minced
  4. 2 baby bell red peppers, chopped
  5. 2 baby bell orange/yellow peppers, chopped
  6. 1 jalapeno, chopped
  7. 2 tablespoons parsley, chopped
  8. 2 teaspoons olive oil
  9. juice of one lime
  10. salt and pepper to taste
Instructions
  1. Mix all ingredients in a bowl. Cover and let chill in refrigerator for at least half and hour to allow flavors to blend.
Notes
  1. If you want less heat, remove the seeds from the jalapeno.
  2. I used baby bell peppers, regular size bell peppers will work as well.
