Grilled Shrimp and Peaches

Fire up the grill with this easy but flavorful dish of grilled shrimp and peaches! The addition of celery and jalapeno adds unexpected flavor.  This salty-sweet dish will have your taste buds wanting more!

Grilled Shrimp and Peaches

Ingredients
  1. 1lb. raw shrimp
  2. olive oil
  3. 1 tablespoon paprika
  4. 2-3 large peaches, sliced into wedges
  5. 1 large or 2 small jalapeños, sliced into thin rounds
  6. 3 celery stalks with leaves, stalks sliced thin on the bias
  7. salt and pepper to taste
  8. 2 large basil leaves, chiffonade
Instructions
  1. Dry off shrimp with paper towels and place in large bowl.
  2. Add paprika, drizzle of olive oil,and a little salt and pepper. Mix together to coat all the shrimp.
  3. Heat a grill pan (or grill), add a bit of olive oil and grill shrimp until they are opaque - about 2-3 minutes per side.
  4. Grill peach slices about 2-3 minutes per side - until they get some good grill marks.
  5. Arrange shrimp, peaches, celery, jalapeños on a plate. Sprinkle with basil.
