Fiddlehead Shiitake Saute

Ingredients
- 1 pint fiddleheads, cleaned
- 6 large shiitake mushrooms, stems removed and sliced
- 1 shallot, diced
- 2 garlic cloves, minced
- 1 teaspoon thyme
- salt and pepper
Instructions
- Fill a large pot with water and bring to boil.
- Once water is boiling add fiddleheads and boil 5 minutes.
- Meanwhile heat olive oil in saute pan. Once hot, add shallots and garlic. Cook for a minute or two until soft.
- Add shiitake mushrooms and thyme. Cook for a few minutes until they begin to soften. Add cooked fiddleheads.
- Season with salt and pepper and cook for about 5 minutes.
- Serve immediately.
