Summer Squash Orzo Salad

Use up the rest of that summer squash with this easy recipe. A great addition to any cook-out meal, it’s easily a great side to any grilled meat!

Summer Squash Orzo Salad

Ingredients
  1. 1 cup whole wheat orzo
  2. 2 summer squash (yellow or zucchini), sliced into thin discs
  3. 2 tablespoons kalamata olives, roughly chopped
  4. 1/2 red onion, diced
  5. 3-4 Roma tomato, chopped
  6. 2 tablespoons celery leaves, chopped
  7. 2 tablespoons parsley, chopped
  8. 1 tablespoon dill, chopped
  9. juice of 1 lemon
  10. 1 tablespoons olive oil
  11. salt and pepper to taste
Instructions
  1. Cook orzo according to directions.
  2. Mix all other ingredients together in the large bowl while the orzo cooks.
  3. Once the orzo is cooked, drain and add to bowl.
  4. Mix thoroughly and let sit for a few minutes until the orzo cools and bit and the flavors blend.
  5. Taste and add more salt and pepper if necessary.
