Grilled Lemon-Fennel Chicken

This simple grilled chicken recipe can be done outside on the grill or inside on a grill pan. This can easily be a quick weeknight meal. Just butterfly the chicken breast for faster cooking. This dish pairs perfectly with my Green Beans with Tomato-Caper Relish and a side of polenta.

Ingredients
  1. 1 lb chicken breasts, butterflied
Marinade
  1. 1 tablespoon olive oil
  2. juice of one lemon
  3. 1 tablespoon fennel seeds
  4. 1 tsp red pepper flakes
  5. salt and pepper to taste
Instructions
  1. Mix together all ingredients for marinade in large bowl. Season chicken with salt and pepper and place bowl with marinade.
  2. Marinate in the refrigerator for at least 1/2 hour to a couple hours.
  3. Grill on the grill or grill pan until internal temperature is 165 degrees.
