Fiddlehead Shiitake Saute

Don’t let the look of these spring delicacies intimidate you! Check out your local farmers market for fiddleheads. Their season is short so get them while you can!

Fiddlehead Shiitake Saute

Ingredients
  1. 1 pint fiddleheads, cleaned
  2. 6 large shiitake mushrooms, stems removed and sliced
  3. 1 shallot, diced
  4. 2 garlic cloves, minced
  5. 1 teaspoon thyme
  6. salt and pepper
Instructions
  1. Fill a large pot with water and bring to boil.
  2. Once water is boiling add fiddleheads and boil 5 minutes.
  3. Meanwhile heat olive oil in saute pan. Once hot, add shallots and garlic. Cook for a minute or two until soft.
  4. Add shiitake mushrooms and thyme. Cook for a few minutes until they begin to soften. Add cooked fiddleheads.
  5. Season with salt and pepper and cook for about 5 minutes.
  6. Serve immediately.
