Wild Mushroom Orzo

I used morels and shiitakes for this recipes but any variety of mushrooms will work. This is a great side dish to my Lemon Dill Flounder with Arugula recipe!

Wild Mushroom Orzo

Ingredients
  1. 1/2 lb whole wheat orzo
  2. 1 tablespoon olive oil
  3. 2 cups mushrooms, cleaned and trimmed
  4. 1 leek, sliced thin into half moons
  5. 2 garlic cloves, minced
  6. 1/2 cup white wine or vegetable broth
  7. 3/4 cup green peas
  8. salt and pepper to taste
Instructions
  1. Cook the orzo according to package instructions, but cook 2 minutes less than recommended
  2. Meanwhile, heat olive oil in large pan. Once it's hot, add the mushrooms and leek, cook a few minutes then add garlic.
  3. Add wine or broth and allow to simmer until most of the liquid is absorbed.
  4. When the orzo is done, drain and add to pan along with the peas.
  5. Stir to combine, season with salt and pepper.
  6. Cook for 2 minutes to finish off the cooking of the orzo and peas.
