- 1 mango, diced
- 2 tablespoons red onion, diced
- 2 garlic cloves, minced
- 2 baby bell red peppers, chopped
- 2 baby bell orange/yellow peppers, chopped
- 1 jalapeno, chopped
- 2 tablespoons parsley, chopped
- 2 teaspoons olive oil
- juice of one lime
- salt and pepper to taste
- Mix all ingredients in a bowl. Cover and let chill in refrigerator for at least half and hour to allow flavors to blend.
- If you want less heat, remove the seeds from the jalapeno.
- I used baby bell peppers, regular size bell peppers will work as well.
