Mango Salsa
- 2 tablespoons red onion diced
- 2 garlic cloves minced
- 2 baby bell red peppers chopped
- 2 baby bell orange/yellow peppers chopped
- 1 jalapeno chopped
- 2 tablespoons parsley chopped
- 2 teaspoons olive oil
- juice of one lime
- salt and pepper to taste
- Mix all ingredients in a bowl.
- Cover and let chill in refrigerator for at least half and hour to allow flavors to blend.
