Green Beans with Tomato-Caper Relish

Ingredients
  • 1 lb green beans, trimmed
  • 4 Roma tomatoes, diced
  • 3 celery stalks with leaves, chopped
  • 1 large shallot or 2 small, minced
  • 2 garlic clove, minced
  • 3 tablespoons capers, chopped
  • 1 tablespoon olive oil
  • fresh ground pepper to taste
  • 1 tablespoon butter
  • salt and pepper to taste
Instructions
  1. Steam green beans for 5-7 minutes. They should be tender, not mushy.
  2. Meanwhile, mix together all remaining ingredients except the butter.
  3. Once the green beans are steamed, place in large bowl with butter and allow butter to melt over green beans. Season with salt and pepper.
  4. Top the green beans with the relish.
