Spring Veggie Slaw

Ingredients
  • 1 kohlrabi bulb
  • 1 fennel bulb
  • 4 radishes
  • 1 garlic scape, sliced thin
  • 1 tablespoon dill
  • 1 tablespoon blue cheese, crumbled
  • ¼ cup Greek yogurt
  • 1 tablespoon buttermilk
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
Instructions
  1. In a small bowl whisk together Greek yogurt, buttermilk, olive oil, dill and apple cider vinegar.
  2. Stir in blue cheese crumbles.
  3. Season with salt and pepper.
  4. Pour dressing over vegetable mixture and stir to combine.
  5. Let sit for at least half hour to let flavors blend.
